(Lu)gu: Legumes that glow in the dark: Development of a food product with pulses

Abstract

A low consumption of pulses in Portugal, especially among the youngest population sector, and the lack of market availability of healthy products with legumes, led to the development of this project: materials, forms and interactions, coupled with social, ethical and aesthetic assumptions, in order to create a food experience with legumes, which is intended to stimulate every sense, but mostly taste and vision. Knowledge about and consumption of legumes were analysed and a visual and graphic study of commerce and online content was carried out using idea generation techniques, based on this creative process in design. Thus, the product developed is a cocoa “churro”, with toppings produced from leguminous plants that fluoresce under black light, a sweet snack, nutritionally balanced and very appealing to young people, aiming to stimulate the consumption of pulses.
